A Different Breed of Bread

Many things have been described as the greatest thing since sliced bread. Ironically, sliced bread is rarely one of them. While comparing breads in the supermarket freezer section, Ezekiel 4:9 Sprouted Grain Bread seemed different. I contacted Food For Life Baking Company to learn more…

Dear Bakers of Healthy Bread Containing Live Grains:

I’m so glad I switched to your sprouted grain bread, especially after learning that enriched breads are made from the endosperm of the wheat kernel. I’ve heard of wheat germ, but not wheat sperm. After hearing about that I gargled for like three hours straight.

The Ezekiel 4:9 Sesame Sprouted Grain Bread package describes this bread as a complete protein that is 84.3% as efficient as the highest recognized source of protein. If it’s a complete protein, why does it still fall 15.7% short in efficiency? What is the highest recognized source of protein in which amino acid residues are joined together by peptide bonds? For that matter, what is a peptide bond and where can I buy some extra amino acid residues to sprinkle on the bread and make it an even more complete protein?

You also advise freezing Ezekiel 4:9 for longer periods of keeping. What do you suggest when the slices freeze together? When that happens, the bread is no longer a loaf; it’s a brick. Even banging it on the counter repeatedly doesn’t separate the slices, although it could get me separated from my wife because she really can’t stand when I do that. From a time standpoint, it would be preferable not having to perform bread maintenance every day by defrosting, separating and re-freezing again. Do you have any suggestions, or do you happen to sell small bread chisels?

Naturally Occurring Amino Acids in Ezekiel 4:9® Sprouted Grain Bread

Amino Acids are the “building blocks of protein”, vital for muscle and tissue growth and reparation in the human body, they are essential for all humans. Amino acids are categorized: “Essential” or “Non-essential.” “Non-essential” amino acids are those which the body can manufacture on its own. “Essential” amino acids are those which the body cannot manufacture on its own and must be included in the diet for proper nourishment of protein.

Protein is categorized “Complete” or “Incomplete”, based on its constitution of essential amino acids. Protein that contains all essential amino acids is considered “Complete,” while protein that does not contain all essential amino acids is considered “Incomplete.” Examples of typical “high protein” foods are: whole milk, eggs and meat. Unfortunately, these foods are also typically high in fat and cholesterol. By contrast, Ezekiel 4:9® Sprouted Grain Bread contains a blend of natural organic grains, beans and seeds. These elements when combined and sprouted form a “complete protein” (having all the essential amino acids). Plus, it’s low in fat and contains zero cholesterol!

Below, we compare amino acids found in our Ezekiel 4:9® Sprouted Grain Bread against Casein (a milk derivative), which is the highest recognized source of protein.

Essential (9): Isoleucine, Leucine, Lysine, Methionine, Phenylalanine, Threonine, Tryptophan, Valine, Histidine

Non-essential (11): Glycine, Glutamic Acid, Arginine, Aspartic Acid, Proline, Alanine, Serine, Tyrosine, Cysteine

(Asparagine and Glutamine were listed as the two amino acids found in Casein but not in Ezekiel 4:9 Bread).

Ezekiel 4:9® Sprouted Grain Bread contains all 9 essential amino acids (those which must be ingested as they cannot be produced by the body), plus 9 more for a total of 18 of the 20 found in casein.

Final Thoughts: That concludes today’s class on Amino Acids and Protein, which Food For Life showed a lot of class in sharing. It’s not easy for the average bread eater to understand what’s essential, non-essential, complete or incomplete. There was once a time when all you really had to figure out was what to put in between two pieces of bread. Now you have to analyze what’s actually in the bread before you can eat it.

That’s a kind gesture, although I’ll still have to experiment with slice surgery to successfully separate them from the rest of the frozen loaf. Either way, it still beats eating endosperm. I also have to do more research on non-essential amino acids. If they aren’t essential, why are they even necessary?
